Chicken Cacciatore, Italian and Low Carb

Chicken Cacciatore, Italian and Low Carb

Serves 6

Ingredients:

2 pounds chicken meat, mix of boneless chicken breast and thigh, cut in bite-size pieces

8 oz. sliced mushrooms

Package of frozen sliced bell peppers and onions

2 Tbsp. Minced garlic, jar

Homemade Garlic & Herb Seasoning 

(Mix together 2 tsp. pepper, 2 tsp. rosemary, 2 tsp. thyme, 4 tsp. marjoram, 4 tsp. lemon pepper, 1/4 cup onion powder, 1/4 cup garlic powder. Break up pieces with mortar and pestle or in a spice grinder. Keep in jar with a tight lid.)

1/3 Cup cooking wine or sherry

Olive oil

1 cup chicken broth

Prego Garlic & Sausage spaghetti sauce

 

Directions:

  1. Saute the chicken in olive oil in 5-quart pan to brown over high heat. Saute the meat in batches if needed. Put cooked meat in crock pot. Turn crock pot to high.
  2. Saute the peppers and mushrooms in olive oil using the same pan used to sauté chicken. Stir in garlic and herb seasonings. Add to crock pot.
  3. Pour chick broth over chicken and pepper mixture.
  4. Pour spaghetti sauce in crock pot. Stir and mix everything well.
  5. Add cooking sherry, stir, cover and cook on high for two hours. Cook on low for two hours.

Serve with toasted garlic bread (use hot dog rolls cut in half and buttered with garlic/parsley, toasted in toaster oven); cauliflower and cheese sauce (cheez whiz); and tossed salad.
