The purpose of this meal was to make a delicious dinner without much fuss. Crockpots are wonderful tools to make meals that take care of themselves until it’s time to serve.
I especially like this meal for a weeknight. Set the crockpot and go about your day until dinner time. Then just make easy side dishes to go with it. Deli-bought cheesecake to end the meal is tasty, too.
Easy Slow Cooker/Weeknight (or whenever) Dinner
1 pound pork loin, I used plain for this recipe, but you can buy already seasoned
Salt and pepper or Montreal seasoning
2 cups chicken broth (store bought, make your own broth or water)
Bob Evan’s classic mashed potatoes (or your favorite brand)
Bag of frozen peas (favorite brand)
1 packet brown gravy mix (any kind)
Fresh pre-made salad mix of choice with favorite dressing
Rolls or bread of choice to “sop up” the gravy!
INSTRUCTIONS
1. Open pork loin and rinse, pat dry. If using pre-seasoned, no need to rinse. Season to taste.
2. Place in slow cooker.
3. Add the broth, just enough to almost cover, this just helps to keep it moist.
4. Set Slow cooker on LOW for 3 hours.
5. When time is up, follow the directions for the mashed potatoes (microwave) Easy!
6. While the potatoes are heating up, add the brown gravy packet to the slow cooked juices. Whisk to combine. You may want to add more broth or gravy, depending on how thick you like your gravy.
7. When the potatoes are done, cook the peas as per the package directions. When done, add to a bowl. I like to add butter, salt and pepper and stir; keep warm.
8. Remove pork from slow cooker to a serving plate and let rest 5 minutes.
9. Stir the gravy and either keep in the slow cooker or pour into a gravy boat or bowl.
10. Slice the pork loin into 1” pieces.
11. Time to eat! Serve the pork with gravy and mashed potatoes, peas, a side salad and bread of choice!
Easy peasy!
*You could also add baby carrots and baby potatoes to the pork loin instead of the microwave items; it’s really all simple and up to your own liking! Hope you enjoy!
