I have this fabulous tablescape for Cinco de Mayo. I just love it! The colors are so bright and vivid. Later, I have a Mexican dip with tortilla chips to snack on. It’s easy to make and delicious!
Mexican Dip
16 oz. sour cream
7.5 oz. Taco Bell taco sauce (mild, medium, hot — whatever heat you like!)
Packet of taco seasoning (use about 2 Tbsp. to add extra flavor)
1 cup Shredded Mexican cheese
Chopped tomato (soak up the juice with a paper towel)
1 cup chopped lettuce
Small jar sliced black olives
Directions:
Sprinkle the bottom of a 9×13 with shredded cheese. Save enough to sprinkle over the dip.
Mix sour cream, taco sauce, and taco seasoning. Spread it over the cheese.
Sprinkle with the remaining cheese. The reason to do the layers like this is for the cheese to absorb extra liquids from the chopped vegetables.
Next spread the chopped tomato. Top that with chopped lettuce and black olives.
Cover and chill in the refrigerator for at least an hour.
Serve with tortilla chips.
Note: If you want to get fancy you can add a layer of guacamole and / or a layer of refried beans.
