Grilled ham and cheese sandwiches are a staple in my family. They’re easy to make, and quick, too. I set up an assembly line of everything needed and can fit eight sandwiches on the griddle if needed.
Gather a stick of butter, loaf of bread, sliced ham, and sliced cheese. You’ll need a couple plates, a butter knife, a sharp knife for cutting the sandwiches in half after they are cooked, and a spatula.
I soften the butter in the microwave just enough to make it easy to spread. I do not like trying to spread cold butter on bread.
Spread butter on one side of each slice of bread. Arrange sliced ham on a plate. If the ham needs to be folded to fit on the bread, do it now. Put a slice of cheese on each side of the sliced ham.
Turn the griddle on. I like it hot to start. Once it starts to warm up, drop a tablespoon or two of butter on the griddle and spread it as it melts. Before the butter starts to brown, start putting one slice of bread on the griddle at a time, butter side down on the griddle.
Put the cheese/ham/cheese on the bread that’s on the griddle and cover it with another slice of buttered bread, with the butter facing out.
Turn the heat down on the griddle if it’s toasting the bread too fast because you want the cheese to get all melt-y and the ham to get warmed through.
Flip over once and toast the other side of the bread. Remove each toasted sandwich to a plate and cut in half. Ready to serve! Chips and a pickle on the side are good additions to this quick meal.
Leftover sandwiches can be refrigerated and eaten cold the next day.
