I am not kidding when I say this easy recipe makes the most delicious chicken salad finger rolls ever! You can control how much onion, celery, and mayonnaise you add, AND you can chop the chicken as much or as little as you like.
Sometimes when I buy chicken salad already made at the grocery store, the chicken is in large chunks which I don’t like. The chicken doesn’t have to be pulverized to mush, but the big chunks aren’t appetizing. Another reason I don’t like the store-bought chicken salad is that sometimes I bite into some gristle, yuck!
Chicken Salad for finger rolls
Ingredients:
One rotisserie cooked chicken picked clean of meat, refrigerate until ready to use.
2 stalks celery
Half medium size onion
Mayonnaise
Finger rolls, 16 to a package
Directions:
Pulverize celery and onion in food processor.
Add 2 cups cooked chicken meat. Chop in food processor. Add more chicken if you need to fill more than 16 rolls.
Add 2 tablespoons mayonnaise to start and blend in food processor. Add more as needed.
Remove chicken salad from food processor.
Split finger rolls if needed. Spoon 2 heaping teaspoons of chicken salad in each roll.
Put each filled roll in storage container that will go in the fridge until needed.
That’s it! So delicious! No need to add salt and pepper. Let your guests doctor up their own rolls.
