My great-grandmother used to make this icebox cake but it was called Trifle Pudding and had bananas in it. My mother had a similar recipe but she mixed chocolate syrup with whipped cream and spread between layers of graham crackers. She made it in a bread loaf pan. For Father’s Day I used ideas from the two recipes and put strawberries and blueberries in between the layers of whipped cream and graham crackers. I didn’t have enough whipped cream so I made a box of instant vanilla pudding for the last two layers! It was so gooddddd! It tasted like strawberry shortcake with blueberries! I can see how this recipe could be changed to make different flavors like peanut butter layers alternated with chocolate layers!
No-bake Icebox Cake
Ingredients:
Box of graham crackers (whatever variety you want)
Dream Whip (one box has 2 packages which should both be used if making the bread loaf pan size but use 2 boxes for a total of 4 packages if making the 9×13 pan size). Alternately, if you like making whipped cream from scratch you can use heavy whipping cream, powdered sugar, and vanilla extract instead of Dream Whip.
Dream Whip uses whole milk and vanilla extract.
Instant Vanilla Pudding: follow directions minus 1 cup of milk, so use 2 cups of whole milk. I find the vanilla pudding is almost too sweet so next time I am just using whipped cream and I am going to try making it from scratch and not use Dream Whip. There was nothing wrong with the Dream Whip, it was awesome. I just like the idea of more homemade.
1 pint of strawberries, washed and cut up (remember to remove the core as that is where bitterness comes from).
1 pint of blueberries, washed
Directions:
Prepare the whipped cream. Spread thin layer in bottom of pan.
Layer graham crackers, breaking up to fit along the gaps.
Another layer of cream.
Layer of strawberries.
Layer of cream.
Layer of graham crackers.
Layer of cream.
Layer of blueberries.
Layer of cream.
Layer of graham crackers.
Layer of cream.
Cover and refrigerate for at least two hours and up to 48 hours. I like my icebox cake to refrigerate overnight.
Serve using a spatula and scrape off anything that sticks to the spatula. Serve in a bowl or on a plate with aerosol whipped cream. Can never have enough whipped cream! (sort of like you can never have enough of gravy at Thanksgiving!)
