What sets this chili apart from stovetop chili is letting it cook in the crock pot on low for 6 to 8 hours or on high for 3 to 4 hours. This is a great meal to include in your weekly meal planning. You can add just about any vegetable or meat to the crock pot to use up leftovers! The longer the chili cooks, the better the flavor!
Crock Pot Chili
Ingredients
- 1-1/2 lbs. Ground beef – lean is good to eliminate the need to spoon out excess fat.
- One large white Onion – this vegetable disappears into the chili while it’s cooking and adds a delicious sweetness.
- One large diced Green pepper
- 2 Tbsp. chopped garlic
- 3 Tbsp. chopped jalapeno peppers from a jar
- Two 15 oz. cans dark red kidney beans. Rinse and drain the beans in a colander first.
- Small can sliced black olives
- 2 cans diced tomatoes with chilies and their juice
- 1 can petite or chopped tomatoes with juices
- 3 Tbsp. tomato paste
- One can Mexicorn
- Seasonings – 3 Tbsp. chili powder, 1 tsp. cumin, 1 tsp. garlic powder, 1 tsp. onion powder, salt and pepper to taste. A pinch of cayenne pepper and red pepper flakes will give it a kick. I like to add 2 Tbsp. sugar and 1 tsp. cinnamon.
Try adding different proportions and ingredients, leave out what you don’t like. This is the recipe I’ve been using for more than 20 years.
Directions
SAUTE onion and green pepper in a skillet. Add chopped garlic and continue to saute for another 2 minutes. Transfer to crock pot.
SAUTE ground beef, add salt and pepper to taste; drain fat as needed. Transfer beef to crock pot. Add the seasonings to the crock pot.
ADD REMAINING INGREDIENTS – rinsed and drained beans, drained canned corn, drained black olives, diced tomatoes with their juice and tomato sauce.
SLOW COOK – cover and set crock pot on low 6-8 hours or on high 3-4 hours; season more to taste if needed.
Serve hot in bowls with tortilla chips on the side.
Let guests add their choice of toppings:
Cheese – Mexican shredded cheese
Onion – chopped green or red onion
Sour cream
Sliced jalapenos – for a spicy kick
