Last year I did not see pickling cukes readily available. I think it was an off year for growing cucumbers. This year, you know what happened? I went in the farmer’s market and didn’t see pickling cukes, but did see some small regular cukes, so I bought those.
I walked through the whole store, or so I thought. After paying for 5 cucumbers, I left at the opposite side of the store from the side I entered. There was a whole basket of pickling cukes! And you know what else? There was a woman scooping them into her shopping basket. She left two cukes behind. LOL!
I went home and got my pickle making supplies ready. Here are some photos from the few minutes it took to make these refrigerator pickles. The recipe is below.

Make sure you know what size lid you need. The big jars are usually the smaller (regular) lids and the smaller 8-ounce (pint) jars are usually called “wide” mouth jars.
Walmart has a good selection of canning jars. I would just go directly to the store to get the jars if I needed more jars. RECIPE
Refrigerator Pickles
Ingredients per pint jar
2 pickling cucumbers
1/2 Cup purified water
1/2 Cup organic distilled white vinegar
1 Tbsp. kosher salt
3 sprigs fresh dill (or 1 Tbsp dried dill)
2 cloves of garlic, smashed
1 tsp. whole peppercorns
1 wide-mouth pint mason jar
Instructions
Cut the cucumbers into the shape you wish: rounds or spears.
In the pint mason jar, combine water, vinegar, salt, dill, garlic and
peppercorns.
Add the prepared cucumbers to the jars, cover, and refrigerate for at
least 24 hours.
Will keep in the refrigerator for at least one month.
Note: It is best to discard the brine after the pickles have been eaten. Make fresh brine for each jar of pickles you make. We do use larger jars at times.
