Crockpot Chicken with Vegetables: Comfort in a Bowl
If there’s one thing I love, it’s a meal that practically cooks itself while filling the house with the kind of aroma that makes everyone wander into the kitchen asking, “What’s that smell?” My Crockpot Chicken with Vegetables recipe is exactly that—simple, hearty, and perfect for busy weeknights or lazy weekends.

Start with 1.5–2 pounds of chicken breasts. I usually sprinkle them with Montreal seasoning first—that little kick really makes the flavors pop. Then layer on your favorite fresh vegetables: Brussels sprouts, baby carrots, cubed squash, baby potatoes, and even onion if you like.
Next comes the magic: one packet of onion soup mix, one packet of Italian dressing mix, and a splash of water just enough to cover. This combination creates a savory broth that’s optional when serving but is so good for drizzling over the chicken and veggies if your family likes it.
Cook it on high for about 4 hours or low for up to 8 hours. The longer it cooks, the more water you’ll want to keep things juicy. Cover, walk away, and let your crockpot work its magic.
When dinner time rolls around, you’ve got tender chicken, perfectly cooked vegetables, and a warm, flavorful aroma that makes the kitchen feel like home. Some in my house love the broth; others stick to the meat and veggies—and that’s the beauty of it.

Crockpot Chicken with Vegetables by Dana
1.5 – 2 pounds chicken breast (frozen and thawed, or fresh), sprinkled with Montreal first and then placed in crockpot.
Fresh vegetables:
Brussel sprouts, about 2.5 pounds
Carrots, baby carrots sold in 12- and 16-ounce bags
Squash, sold peeled and cubed in 16- and 20-ounce containers
Baby potatoes, about 1.5 pounds; cut in half and then add to crockpot
Onion, one fresh, cut in chunks, optionalAfter adding the vegetables you want to use on top of the chicken, then add the seasoning packets and water to cover.

One packet italian dressing mix
Montreal Seasoning for Chicken
Crockpot on high for 4 hours OR low for up to 8 hours. The longer the crockpot is on, the more water you will need in the crockpot.
Cover and wait for the delicious aroma to fill the house! The chicken juices blend with the seasoned water and can be ladled when serving, or not. Some in my house want only the meat and vegetables, no broth.
