Cozy Crockpot Beef Stew (So Easy You’ll Want to Make It Every Week)
There’s something about a slow cooker meal that makes an ordinary day feel special—especially when the house smells like Sunday dinner by midafternoon.
This recipe is one of my go-tos for busy days when I want comfort food without the fuss. Everything goes into the crockpot, and by dinnertime, you’ve got tender beef, rich gravy, and veggies that taste like they’ve been simmering in love all day long.
Here’s what you’ll need:
- 1 to 1½ lbs beef cubes (the kind that stay tender with long cooking)
- 1 packet dry onion soup mix
- 1 packet beef gravy mix
- 4 cups water (add more water or beef stock if needed)
- Carrots, bag of baby or pre-cut or cut 4 or 5 carrots yourself into big chunks
- Baby potatoes (just give them a quick rinse—no peeling needed; cut in half if large)

How to make it:
- Cut your beef into cubes and sear in skillet before adding to crockpot. Add water to the skillet to get all the browned juices and add to crockpot, too.
- Add everything to your crockpot—beef first, then veggies.
- Sprinkle in the dry mixes, pour the water over top, and give it a little stir.
- Cover and cook on Low for 8 hours (or High for about 4–5).
By the end of the day, the beef is fork-tender, the carrots are soft and sweet, and the broth has turned into this perfect, savory gravy. There is no need to chop and add an onion because the onion soup mix takes care of that task very well. Serve with crusty sourdough bread.
