This Baked Stuffed Haddock recipe is easy to put together and delicious! This family recipe has been passed down from my grandmother to my mother to me. If you’re having company and if they like fish, this is a very presentable dinner.

Baked Stuffed Haddock
Haddock layered and baked with a Ritz cracker and shrimp/crabmeat stuffing.

- 1.5 to 2 pounds haddock
- 2 Tbsp light cream or milk
- 1 tsp basil
STUFFING:
- 2 rolls of Ritz crackers rolled fine
- 2 Tbsp. Parmesan cheese
- 1 tsp. Worcestershire sauce
- 1 stick melted butter plus extra to melt and drizzle over top stuffing layer
- 2 cans crabmeat or tiny shrimp with juices
Preheat oven to 350 degrees
Mix stuffing ingredients.
In a 6×10 pan, layer little cream, stuffing, fish, more cream, stuffing fish, little cream and finally finishing with stuffing.
Bake for 40 to 45 minutes.
We've made this recipe with one pound of fish and also with 2.5 pounds of fish. Adjust your stuffing so that you have enough for the middle and top layers of stuffing.
No need to spray-oil the baking pan if you use non-stick foil.
We sprinkle Old Bay seasoning over the top layer of stuffing, along with the basil. I also like to use about 1/4 tsp. garlic powder in the stuffing mix.

This is a classic New England baked haddock recipe. Serve it with your favorite hot vegetable and a freshly tossed garden salad. Don’t forget the salad toppings! I think you will enjoy using these items when you make and serve this dinner. All are from my Amazon store.
Fish platter. I was really lucky and scored my fish platter and matching dishes at the local hospice secondhand store. I could only find the platter on Amazon. The dishes seem to be unavailable except for online sources selling secondhand plates such as Etsy and eBay.
White oval dinner plates. Again, I would have shared a link for glass fish-shaped dinner plates that match the platter but could not find any on Amazon, Walmart, or through a Google search. I think these white oval plates will do just as well.
Non-stick foil. Line the baking dish with this foil for easy clean-up. You can probably find this foil at your grocery store.
Fish spatula. I wondered if a fish spatula exists and it does! These are more for turning over a fish while it’s being cooked, but you could also use for serving.
Pioneer Woman melamine mixing bowls with covers. Use the largest size bowl for your tossed salad to accompany the baked fish! Use one of the smaller sizes for mixing the stuffing ingredients. So pretty!
Salad bowl set of 4. These oval ceramic dishes can be used for salad or other side dishes, even soup.
Skeleton Hands Salad Tongs. We bought our skeleton hands at the dollar store and use them for serving salad. They work really well and are an interesting conversation starter.
Bamboo cutting boards set of 3. I have at least six different size cutting boards, including this set. We also use them for wooden trivets to protect counter surfaces from hot pans and baking dishes.
Salad Toppers. These are available at my grocery store. I particularly like the blueberries and pecans combination.
