Baked Stuffed Haddock
Haddock layered and baked with a Ritz cracker and shrimp/crabmeat stuffing.

- 1.5 to 2 pounds haddock
- 2 Tbsp light cream or milk
- 1 tsp basil
STUFFING:
- 2 rolls of Ritz crackers rolled fine
- 2 Tbsp. Parmesan cheese
- 1 tsp. Worcestershire sauce
- 1 stick melted butter plus extra to melt and drizzle over top stuffing layer
- 2 cans crabmeat or tiny shrimp with juices
Preheat oven to 350 degrees
Mix stuffing ingredients.
In a 6×10 pan, layer little cream, stuffing, fish, more cream, stuffing fish, little cream and finally finishing with stuffing.
Bake for 40 to 45 minutes.
We've made this recipe with one pound of fish and also with 2.5 pounds of fish. Adjust your stuffing so that you have enough for the middle and top layers of stuffing.
No need to spray-oil the baking pan if you use non-stick foil.
We sprinkle Old Bay seasoning over the top layer of stuffing, along with the basil. I also like to use about 1/4 tsp. garlic powder in the stuffing mix.
